Easy weekend breakfast

Ingredients:

  • 1 small banana

  • I medium egg (omit if vegan)

  • 140ml milk of choice

  • 1 tsp honey

  • 20g protein powder (vanilla or chocolate)

  • 20g buckwheat flour

  • 1tbsp cacao powder ( a great source of magnesium)

  • 1 tsp baking powder

  • Coconut or olive oil to fry

Method

Mash banana with a fork in a bowl Whisk in egg, milk and honey.

Add all dry ingredients and whisk again

Warm a large frying pan over a medium heat and add 1 tablespoon of oil and swirl around pan. Dollop in around 1 heaped tablespoon of mixture to make a thicker style pancake. Do this again to add 2 or 3 to the pan and cook for 2-3 mins each side…flip when browned and continue until you have a mouth-watering stack!

To serve

Nut butter, maple syrup or berries and yoghurt on the side….whatever you fancy!
